Rhubarb Squares

  1. Preheat oven 350F.
  2. Crust:.
  3. mix together 2 cups flour, 1/2 cup sugar, 1/2 cup butter, 1 tsp baking powder, 1/2 tsp salt, 1 beaten egg.
  4. Press into ungreased 9 x 13" pan.
  5. Save 1 cup of crumble mix for topping.
  6. Filling:.
  7. Mix together well: rhubarb, 2 cups sugar, 1/2 cup melted butter, 1/2 cup flour, 2 beaten eggs, and vanilla.
  8. Pour over crust.
  9. Sprinkle with topping.
  10. Bake 50-60 minutes until top is light brown.
