Rhubarb Squares
- 2 cups flour
- 12 cup sugar
- 12 cup butter
- 1 teaspoon baking powder
- 12 teaspoon salt
- 1 egg, beaten
- 4 cups rhubarb, thinly sliced
- 2 cups sugar
- 12 cup butter, melted
- 12 cup flour
- 2 eggs, beaten
- 1 teaspoon vanilla
- Preheat oven 350F.
- Crust:.
- mix together 2 cups flour, 1/2 cup sugar, 1/2 cup butter, 1 tsp baking powder, 1/2 tsp salt, 1 beaten egg.
- Press into ungreased 9 x 13" pan.
- Save 1 cup of crumble mix for topping.
- Filling:.
- Mix together well: rhubarb, 2 cups sugar, 1/2 cup melted butter, 1/2 cup flour, 2 beaten eggs, and vanilla.
- Pour over crust.
- Sprinkle with topping.
- Bake 50-60 minutes until top is light brown.
