Mandarin Chicken
- 3 whole broiler-fryer chicken breasts, halved
- 1 tsp. salt
- 1/2 tsp. ground pepper
- 1/4 c. corn oil
- 1 (11 oz.) can mandarin orange segments, drained (1/2 c. juice reserved)
- 1/4 c. soy sauce
- 1 Tbsp. flour
- 1 c. crushed pineapple
- 1 tsp. onion salt
- 1 tsp. Accent
- 1 tsp. prepared mustard
- 1 tsp. cider vinegar
- 1/4 tsp. garlic powder
- 1/2 c. diced green pepper
- Sprinkle breasts with salt and pepper.
- Heat corn oil in frypan over medium heat.
- Place chicken in pan, skin side down; saute until golden brown.
- In a bowl, mix together orange juice, soy sauce and flour until smooth.
- Stir in pineapple, onion salt, Accent, mustard, vinegar and garlic powder.
- Place browned chicken in large, shallow baking dish; pour sauce over chicken.
- Cover; bake in a 350u0b0 oven for 1 hour, basting occasionally.
- Add orange segments and green pepper; continue baking 5 minutes, or until chicken is done.
- Serve sauce over rice.
- Makes 6 servings.
