Courgette spaghetti with meatballs recipe

  1. Heat the oven to 200C/fan 180C/gas mark 6.
  2. Line a baking tray with non-stick baking parchment.
  3. Add the meatballs and cook for 20-25 mins until cooked through.
  4. Meanwhile, spray a pan with oil.
  5. Add the garlic and cook for 1 min, stirring.
  6. Add the cherry tomatoes and cook for 3 mins until they soften.
  7. Add the wine and bring to the boil.
  8. Reduce the heat, add the capers and olives and simmer for 5 mins.
  9. Add the cooked meatballs and simmer for 2 mins.
  10. Using a julienne peeler or spiralizer, slice the courgettes into long spaghetti.
  11. Spray a large frying pan with oil and set over a medium-high heat.
  12. Add the courgettes and cook, stirring for 1-2 mins, until wilted.
  13. Spoon onto two plates, top with the meatballs and sauce, and serve sprinkled with the parmesan.
