Instant Prep, Easy Chirashi-zushi

  1. Thinly slice the bonito.
  2. Transfer the slices to a bowl, pour soy sauce over them just until it covers the top of the bonito, then add grated ginger, and set aside to macerate.
  3. Thinly slice the cucumber.
  4. Fill rice bowls with sushi rice, and top with bonito from Step 1 and cucumber slices from Step 2, sprinkle with sesame seeds, and add a touch of picked ginger.
