Roast Goose with Apple-Raisin Stuffing

  1. Sprinkle the inside of the goose with salt.
  2. Prick skin well; set aside.
  3. In a skillet, saute the onion and celery in butter; transfer to a large bowl.
  4. Add the apples, raisins, bread, sugar and salt.
  5. In a small bowl, beat eggs, cider and water.
  6. Pour over bread mixture and toss lightly.
  7. Stuff into the goose.
  8. Place with breast side up on a rack in a large shallow roasting pan.
  9. Bake, uncovered, at 350F for 3 to 3-1/2 hours or until a meat thermometer reads 185 degrees.
  10. Drain fat from pan as it accumulates.
  11. Remove all dressing.
