Roasted Potatoes
- 6 potatoes, skin removed, cubed
- Salt and pepper, to taste
- 1/4 cup chopped flat-leaf parsley
- 1/2 cup Pecorino Romano
- 1/4 cup bread crumbs
- Olive oil
- Season the potatoes with salt and pepper.
- Cover potatoes with the parsley, cheese, and bread crumbs.
- Drizzle the olive oil over the potatoes.
- Bake in a 350 degree oven until brown and tender.
