Fiesta Chicken & Rice Bake
- 1 can 98% fat-free cream of chicken soup
- 1 cup chunky salsa
- 12 cup water
- 1 cup whole kernel corn
- 34 cup uncooked white rice (I used Uncle Ben's)
- 4 boneless skinless chicken breasts (about 1 lb)
- 12 cup shredded cheese (2 oz.)
- In a 2 qt shallow baking dish mix soup, salsa, water, corn and rice.
- Place chicken on rice mixture.
- Sprinkle chicken with paprika.
- Cover.
- bake at 375 degrees for 45-60 minutes or until chicken is done and rice is tender, Sprinkle with cheese.
