Cuban Chicken Recipe
- 4-5 chicken breasts, skinned
- 1/2 pound sliced ham diced
- 1 green pepper, diced
- 1 lg. red onion, diced
- 2 (14 ounce.) cans stewed tomatoes, liquid removed
- 1/2 c. sliced green olives
- Garlic, minced or possibly chopped, to taste
- 3-4 c. cooked rice
- Oil-sufficient to saute/fry chicken
- Avocado, sliced
- Dice chicken breasts and saute/fry in wok with garlic.
- When cooked, add in onion and green pepper.
- Cook till onion is tender.
- Add in ham, stewed tomatoes, olives and rice.
- Stir and lift till warm.
- Serve with sliced avocado on the side.
