Vegetable-Herb Broth

  1. Combine all ingredients in medium saucepan.
  2. Bring mixture to boil.
  3. Reduce heat to medium and simmer until liquid is reduced to 2 cups, about 30 minutes.
  4. Strain broth; discard all solids.
  5. (Broth can be prepared 1 day ahead.
  6. Cover broth tightly and refrigerate.)
