Banana Loaf

  1. In larg mixing bowl, combine bananas, sugar, oil, sour cream and eggs; mix thoroughly.
  2. In separate bowl, mix together flour, baking powder, soda and salt; add to banana mixture, mixing just until combined.
  3. Pour into greased 9 x 5-inch (2 L) loaf pan.
  4. Bake in 325 F (160 C) oven for 1 to 1-1/4 hours or until tester inserted in centre comes out clean.
  5. Cool in pan 5 minutes before turning out onto rack to cool completely.
  6. Slice and serve; butter if desired.
  7. Makes 1 loaf.
