Mexican Rice (Mcdougall)
- 1 each onions chopped
- 1 each green bell peppers chopped
- 1 bunch scallions, spring or green onions chopped
- 1/2 pound mushrooms sliced
- 2 cloves garlic minced
- 1/2 cup water
- 16 ounces tomatoes chopped
- 4 ounces green chili peppers, canned chopped
- 2 teaspoons chili powder
- 1 teaspoon cumin ground
- 1 dash red hot pepper sauce or two
- 5 cups brown rice cooked
- Saute the onion, green pepper, scallion, mushrooms, and garlic in the 1/2 cup of water for 10 minutes.
- Add the remaining ingredients and mix well.
- Cook over low heat for about 10 minutes, or until heated through, stirring frequently.
