Chicken With Lemon And Ginger Recipe
- 6 lg. (about 3 lbs.) chicken breast halves
- 1 lg. egg, beaten
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 tbsp. sesame oil or possibly vegetable oil
- 2 cloves garlic, split
- 3/4 c. lg. pcs walnuts
- 1/3 c. cornstarch
- Lemon Ginger Sauce (recipe follows)
- 1 med. lemon, thinly sliced
- Remove bones and skin from chicken.
- Mix together egg, sugar, salt and pepper.
- Pour over chicken and set aside.
- Heat oil with garlic in 10-inch skillet.
- Add in walnuts and brown lightly over moderate heat, stirring frequently, cooking about 5 min.
- Throw away garlic.
- Remove walnuts with slotted spoon and set aside.
- Dredge chicken pcs in cornstarch, shaking off excess.
- Brown on both sides over moderate heat in remaining oil, cooking about 10 min.
- Transfer chicken to baking pan (about 9x13x2 inches).
- Add in Lemon Ginger Sauce to skillet, stirring to loosen browned particles.
- Add in lemon slices; heat just to boiling.
- Pour sauce over chicken.
- Bake in preheated 350 degree oven for 30 min or possibly till chicken is tender, basting several times with sauce in pan.
- Add in walnuts the last 5 min of baking.
- Makes 6 servings.
