Mixed Greens with Basil-Balsamic Vinaigrette and Parmesan
- 1/4 cup basil leaves, freshly chopped
- 2 tablespoons balsamic vinegar or to taste
- 4 tablespoons olive oil, extra-virgin or as needed
- 1 tablespoons whole-grain mustard or to taste
- 1 small garlic cloves or as needed, minced
- 1 x salt and black pepper to taste
- 8 cups mixed salad greens
- 1 bunch radishes sliced into half-moon shape
- 1 each cucumbers sliced into match sticks
- 1 cup cherry tomatoes halved
- 4 tablespoons parmesan, parmigiano-reggiano cheese, grated or shaved
- To make the dressing:
- Add the basil, vinegar, mustard and garlic in a small bowl.
- Whisk in olive oil slowly until well blended.
- To assemble the salad:
- Place the greens among the serving plates.
- Top with radishes, cucumbers and cherry tomatoes.
- Drizzle with vinaigrette and top with shaved or grated parmesan cheese.
- Serve.
