Honey-Glazed Grilled Pineapple

  1. Whisk first 4 ingredients in large glass baking dish.
  2. Peel pineapple; cut crosswise into 6 rounds.
  3. Remove core; discard.
  4. Add pineapple to dish; turn to coat.
  5. Cover with plastic wrap; let stand at room temperature at least 1 hour and up to 2 hours.
  6. Prepare barbecue (medium heat).
  7. Remove pineapple from marinade (reserve marinade).
  8. Grill until golden brown, about 3 minutes per side.
  9. Transfer to serving dish.
  10. Pour reserved marinade over.
  11. Sprinkle with mint.
  12. Serve warm or chilled.
