Banana Tea Bread
- 1/2 c. butter or margarine
- 1 1/3 c. sugar
- 2 eggs
- 1/4 c. sour cream
- 2 Tbsp. light rum or milk
- 1 tsp. almond extract
- 2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1/4 tsp. salt
- 1 c. mashed ripe bananas
- 1 1/2 c. chopped pecans
- powdered sugar (to sprinkle on top)
- Combine butter and sugar in a large mixing bowl; cream until light and fluffy.
- Add eggs, sour cream, rum and almond extract, mixing well.
- Combine flour, baking powder, soda and salt; add to creamed mixture alternately with mashed bananas, mixing well after each addition.
- Stir in pecans.
- Pour batter into 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 1 hour and 10 minutes or until done. If loaf gets too brown, cover with foil.
- Remove from pan; cool. Sprinkle sugar.
