Ham Slice In Cumberland Sauce Recipe
- 1 c. ruby port
- 1/2 c. dark seedless raisins
- 1/4 c. red currant jelly
- 1 teaspoon dry mustard
- 1/2 teaspoon grated lemon peel
- 1/2 teaspoon grated orange peel (optional)
- 1/4 teaspoon allspice
- 1 fully cooked ham slice, cut about 1 1/2 inches thick (approx. 2 1/2 lbs.)
- 2 tbsp. cornstarch
- 1/4 c. orange juice
- Preheat oven to 325.
- In small saucepan over medium heat, heat to boiling first 7 ingredients.
- Meanwhile, slash fat edges of ham slice and put in 10x6 baking dish.
- In c., blend cornstarch and orange juice till smooth; gradually stir into warm wine mix and cook, stirring constantly till thickened.
- Pour over ham slice in baking dish.
- Cover tightly with foil and bake approximately 1 1/4 hrs.
- Makes 8 servings.
