Chipotle Mini Burgers

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Combine sour cream and adobo sauce in bowl; mix well.
  3. Cover; refrigerate until serving time.
  4. Combine ground beef, chipotle peppers, salt and pepper in bowl.
  5. Shape into 8 small patties.
  6. Place patties onto grill.
  7. Grill, turning once, 8-10 minutes or until internal temperature reaches at least 160F and meat is no longer pink in center.
  8. Top each burger with 2 pieces cheese; let melt slightly.
  9. Top each bottom half of bun with 1 lettuce leaf half, 1 slice tomato, 1 burger, 2 teaspoons sour cream mixture, 1 red onion ring and top half of bun.
