Asparagus, Mint, and Parmesan Scramble

  1. In a large bowl, whisk together the eggs, 1 tablespoon water, and 1/2 teaspoon each salt and pepper.
  2. Melt the butter or heat the oil in a 10-inch non-stick skillet over medium heat.
  3. Add the asparagus and cook, stirring occasionally, until beginning to soften, 3 to 4 minutes.
  4. Add the egg mixture and cook, stirring every few seconds with a rubber spatula, to desired doneness, 2 to 3 minutes for medium-soft eggs.
  5. Remove from the heat and fold in the Parmesan and mint.
