Asparagus, Mint, and Parmesan Scramble
- 8 large eggs
- kosher salt
- Pepper
- 1 tbsp. unsalted butter or olive oil
- 1/2 lb. asparagus
- 2 oz. Parmesan
- 1/4 c. Chopped fresh mint
- In a large bowl, whisk together the eggs, 1 tablespoon water, and 1/2 teaspoon each salt and pepper.
- Melt the butter or heat the oil in a 10-inch non-stick skillet over medium heat.
- Add the asparagus and cook, stirring occasionally, until beginning to soften, 3 to 4 minutes.
- Add the egg mixture and cook, stirring every few seconds with a rubber spatula, to desired doneness, 2 to 3 minutes for medium-soft eggs.
- Remove from the heat and fold in the Parmesan and mint.
