Bulgar, Red Pepper, Cucumber And Cheese Salad Recipe
- 8 ounce bulgur wheat
- 1/2 pt boiling water
- 4 Tbsp. extra virgin olive oil
- 3 Tbsp. lemon juice
- 2 Tbsp. minced fresh mint
- 3 Tbsp. minced fresh coriander Salt Pepper
- 1 x red pepper, grilled, peeled and sliced
- 1 bn plump spring onions, minced
- 2 clv garlic, minced
- 1/2 x cucumber, coarsely minced
- 4 ounce feta cheese, crumbled Lime wedges, to serve
- Place the bulgur wheat in a large bowl, add in the boiling water and leave to soak for 30 min, stirring occasionally with a fork, till the water has been absorbed.
- In a mixing bowl, whisk together the oil, lemon juice and seasoning.
- Pour oil mix over the bulgur wheat, add in the herbs and mix well.
- Then fold in the remaining ingredients.
- Cover and refrigeratetill required.
- Serve garnished with lime wedges.
- Serves 4 - 6.
- Oil-cured black olives can also be added to this salad just before serving, if desired.
