Bulgar, Red Pepper, Cucumber And Cheese Salad Recipe

  1. Place the bulgur wheat in a large bowl, add in the boiling water and leave to soak for 30 min, stirring occasionally with a fork, till the water has been absorbed.
  2. In a mixing bowl, whisk together the oil, lemon juice and seasoning.
  3. Pour oil mix over the bulgur wheat, add in the herbs and mix well.
  4. Then fold in the remaining ingredients.
  5. Cover and refrigeratetill required.
  6. Serve garnished with lime wedges.
  7. Serves 4 - 6.
  8. Oil-cured black olives can also be added to this salad just before serving, if desired.
