Roast Duck with Orange Sauce

  1. Season duck inside and out with salt, pepper, and rosemary.
  2. Glaze duck with olive oil.
  3. Stuff duck with all the apple, orange, and onion.
  4. Bake approximately 3 1/2 hours at 275 degrees (125 C.).
  5. Turn duck every 30 minutes and glaze with juices dropped into pan.
  6. Cool duck, remove stuffing, and debone gently.
  7. Place bones and stuffing in a medium pot with 2 cups (475 ml) of water.
  8. Boil for 45 minutes.
  9. Strain, and adjust seasoning, and add Grand Marnier.
  10. Serve duck with sauce, wild rice, and vegetables.
