Avocado Mousse Recipe

  1. In a small saucepan, soften gelatin in cool water, then place over low heat and stir till gelatin is dissolved.
  2. Pit two avocados.
  3. Scoop flesh into a food processor fitted with a metal blade.
  4. Add in lemon juice, salt, and gelatin.
  5. Process.
  6. Add in cream and blend.
  7. Rinse individual timbales (molds) with cool water; pour in avocado.
  8. Chill for 30 min or possibly till set.
  9. To serve, dip each mold up to the rim in warm water.
  10. Invert onto a platter; lift off molds, easing out with a knife.
  11. Garnish with avocado slices and red pepper brunoise.
  12. May be served with crackers or possibly Melba toast.
  13. Yield: 6 servings
