Avocado Mousse Recipe
- 2 Tbsp. Unflavored gelatin
- 1 c. Cool water
- 2 x Avocados
- 2 Tbsp. Lemon juice
- 1 x Red pepper
- 2 tsp Salt
- 1 Tbsp. Whipped cream Avocado slices and minced red pepper Crackers or possibly Melba toast
- In a small saucepan, soften gelatin in cool water, then place over low heat and stir till gelatin is dissolved.
- Pit two avocados.
- Scoop flesh into a food processor fitted with a metal blade.
- Add in lemon juice, salt, and gelatin.
- Process.
- Add in cream and blend.
- Rinse individual timbales (molds) with cool water; pour in avocado.
- Chill for 30 min or possibly till set.
- To serve, dip each mold up to the rim in warm water.
- Invert onto a platter; lift off molds, easing out with a knife.
- Garnish with avocado slices and red pepper brunoise.
- May be served with crackers or possibly Melba toast.
- Yield: 6 servings
