Black Bean Soup, Miss Daisy's Recipe
- 30 ounce Black beans
- 2 c. Chicken broth, fat free
- 2 c. Water
- 1 whl carrot, sliced
- 1 whl yellow onion, minced
- 1 whl idaho potatoes, grated
- 2 stalk celery, minced
- 1 tsp Dry oregano
- 1 tsp Cumin
- 1/8 tsp Cayenne
- 2 Tbsp. Ons, fresh cilantro minced
- 1/3 c. Fresh lemon juice Nonfat lowfat sour cream
- In a large stock pot combine the beans, broth, water, carrot, onion, potato, celery, oregano, cumin , cayenne and cilantro.
- Cook over medium heat for 20 min.
- Stir in the lemon juice just before serving.
- Garnish with 1 Tbsp.
