Mt Lassen Chicken
- 3 lbs chicken, cut into pieces
- 2 tablespoons olive oil
- 1 garlic clove
- 1 onion, chopped
- 1 stalk celery, chopped
- 12 bay leaf, 1/4 t sage
- 14 cup sherry wine
- 3 tomatoes, peeled sliced
- 1 cup mushroom
- 1 pinch allspice
- 1 pinch sugar
- 12 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- dredge chicken in flour shake off excess.
- brown in oil
- put in casserole.
- saute onion celery and garlic.
- pour over chicken add spices
- add tomatoes add wine cover and bake 90 minutes at 400 degrees until chicken tender no time given
- may need a little water.
