Gouda Quesadilla With Cilantro-Walnut Pesto
- 8 corn tortillas
- 2 cups gouda cheese, grated
- 1 cup cilantro, chopped and stemms removed
- 34 cup walnuts, toasted
- 2 garlic cloves
- 14 cup olive oil
- 1 teaspoon salt
- 12 teaspoon pepper
- 2 tablespoons lime juice, fresh
- Place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth.
- Fill each corn tortilla with 1/4 cup shredded gouda and fold in half.
- Cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side.
- Serve with the cilantro pesto.
