Gouda Quesadilla With Cilantro-Walnut Pesto

  1. Place cilantro, walnuts, garlic, salt, pepper, lime juice, and olive oil in a food processor and blend until smooth.
  2. Fill each corn tortilla with 1/4 cup shredded gouda and fold in half.
  3. Cook on a hot grill or grill pan until cheese is melted, about 1-2 minutes per side.
  4. Serve with the cilantro pesto.
