Very Creamy Crab Croquettes

  1. Melt butter in a heavy set pan, and saute the finely chopped onion.
  2. Sprinkle flour, and saute over low heat until it's no longer floury.
  3. Take care not to let it burn.
  4. Add milk to the pan little by little, mixing all the time with a wooden spatula, until you have a creamy sauce.
  5. Add soup stock granules, pizza cheese, and crabmeat and mix.
  6. Season with salt and pepper.
  7. Transfer the filling to a shallow container, and chill in the refrigerator until the sauce is set.
  8. Divide the filling into 8 portions and form each into a patty.
  9. Oil your hands first to prevent the filling form sticking.
  10. Put the formed patties in a floured container, and put them in the freezer to firm up.
  11. This makes them easier to coat.
  12. Coat the patties in flour, beaten egg, and panko.
  13. Leave at room temperature.
  14. Then deep fry in 375F/190C oil until golden brown.
