Avocado Bruschetta
- 1 ripe avocado
- 12 cup oven roasted tomatoes
- 12 cup roasted red and yellow peppers
- 14 cup pitted kalamata olive
- 14 cup chopped fresh basil
- drizzle olive oil, salt and pepper to taste
- Dice the avocado, then lightly mix the first five ingredients.
- Add salt, pepper and the drizzle of olive oil over the mix.
- Slice the baguette and lightly toast the slices under the broiler.
- Serve warm.
