Manicotti alla Bolognese

  1. Cook manicotti according to package directions.
  2. Brown ground beef with onion and garlic in a large frypan over medium-high heat.
  3. Drain off fat.
  4. Stir in crumbs, carrot, parsley, eggs, and 1/2 cup of Parmesan cheese.
  5. Season to taste.
  6. Spread 1/2 cup pasta sauce over bottom of 13x9x2-inch baking pan.
  7. Fill manicotti with meat mixture.
  8. Arrange in a single layer and cover with remaining sauce.
  9. Sprinkle with remaining Parmesan cheese.
  10. Bake at 350F for 35 to 40 minutes or until tender.
