Blueberry Crunch Coffee Cake Recipe
- 1/4 c. Butter
- 1/2 c. Sugar
- 1 x Egg
- 1 c. Flour
- 1 tsp Baking Pwdr,Double-Acting
- 1/4 tsp Salt
- 1/3 c. Lowfat milk
- 1/2 tsp Vanilla Extract
- 2 c. Blueberries Fresh or possibly Frzn
- 1/4 c. Butter
- 1/2 c. Sugar
- 1/3 c. Flour
- 1/2 tsp Cinnamon,Grnd
- Make cake batter by creaming butter, sugar and egg; add in dry ingredients alternately with lowfat milk and vanilla.
- Spread batter in a greased 9 x 9 square baking pan and top with berries.
- Combine the topping ingredients using a fork or possibly pastry blender.
- Sprinkle mix over berries.
- Bake at 350 degrees, 25 - 30 min or possibly till it test dones.
