Fried Octopus(Octopus Fritti)
- 3 lb. small octopus
- 1 c. flour
- 1/4 tsp. pepper
- olive oil for frying
- Clean
- octopus
- by
- soaking
- in salt water and pounding octopus against side of bowl.
- This helps remove any sand that may be
- trapped
- in
- suction cups.
- Cut off head and only use tentacles.
- Wash,
- rinse
- and drain again.
- Cut with scissors, keeping
- 2
- tentacles together.
- Drain octopus in colander and place
- flour
- in
- bowl with pepper.
- Heat oil in large skillet and dip
- octopus
- in flour and then into oil.
- Fry on medium-high heat, cooking about 8 minutes on each side.
- Brown well, but
- be careful not to burn.
- To serve, place on warm platter with
- lemon wedges,
- if desired.
- Keep warm in oven until all frying is complete.
- Makes 5 to 6 servings.
