Fried Octopus(Octopus Fritti)

  1. Clean
  2. octopus
  3. by
  4. soaking
  5. in salt water and pounding octopus against side of bowl.
  6. This helps remove any sand that may be
  7. trapped
  8. in
  9. suction cups.
  10. Cut off head and only use tentacles.
  11. Wash,
  12. rinse
  13. and drain again.
  14. Cut with scissors, keeping
  15. 2
  16. tentacles together.
  17. Drain octopus in colander and place
  18. flour
  19. in
  20. bowl with pepper.
  21. Heat oil in large skillet and dip
  22. octopus
  23. in flour and then into oil.
  24. Fry on medium-high heat, cooking about 8 minutes on each side.
  25. Brown well, but
  26. be careful not to burn.
  27. To serve, place on warm platter with
  28. lemon wedges,
  29. if desired.
  30. Keep warm in oven until all frying is complete.
  31. Makes 5 to 6 servings.
