Flora's Twice Baked Sweet Taters
- 6 large Sweet Taters, scrubbed
- 1/4 cup Brown Sugar
- 1/2 cup Butter
- 1 tsp Pumpkin Pie Spice
- 1 tsp Cinnamon
- 1 Crushed Pecans* optional
- Bake sweet taters in the oven @400 until a knife is inserted and it is tender
- Allow to cool, then cut a slit lengthwise in the tater and using a spoon scoup out the pulp.
- I leave some on the sides to give the tater some structure
- Combine the butter, brown sugar, and spices to the pulp in a bowl and whip together.
- Spoon the mixture back into the tater and top with a sprinkle of brown sugar and the pecans
- Bake for an additional 5 minutes.
