Flora's Twice Baked Sweet Taters

  1. Bake sweet taters in the oven @400 until a knife is inserted and it is tender
  2. Allow to cool, then cut a slit lengthwise in the tater and using a spoon scoup out the pulp.
  3. I leave some on the sides to give the tater some structure
  4. Combine the butter, brown sugar, and spices to the pulp in a bowl and whip together.
  5. Spoon the mixture back into the tater and top with a sprinkle of brown sugar and the pecans
  6. Bake for an additional 5 minutes.
