Sticky Rice with Mangoes

  1. Combine rice, 2 1/2 cups water, 1/2 cup coconut milk, and brown sugar in large saucepan.
  2. Cover, and bring to a boil.
  3. Reduce heat to medium-low and simmer 20 minutes, stirring occasionally to prevent sticking.
  4. Stir in remaining coconut milk and 1 cup water.
  5. Cover, and simmer 10 minutes more.
  6. Remove from heat and let steam, covered, 20 minutes, or until rice has absorbed most of liquid.
  7. Stir in vanilla.
  8. Spoon warm rice onto serving plates.
  9. Top each serving with mango slices.
