Pasta with Ham and Tricolor Peppers
- 1 package penne pasta
- salt
- 3 tbsp. olive oil
- 4 red, yellow, and/or orange peppers
- 4 oz. deli ham in 1 piece
- 2 clove garlic
- 1/2 tsp. salt
- 1/4 tsp. coarsely ground black pepper
- 1/2 c. loosely packed fresh basil leaves
- 1/2 c. grated Parmesan cheese
- Heat large, covered saucepot of salted water to boiling over high heat.
- Add pasta and cook as label directs.
- Meanwhile, in 12-inch skillet, heat oil over medium heat.
- Add peppers and cook, covered, about 10 minutes, until very soft and lightly browned, stirring occasionally.
- Stir in ham, garlic, salt, and black pepper; cook 1 minute.
- Drain pasta, reserving 1/2 cup pasta cooking water.
- In large serving bowl, toss pasta with pepper mixture and reserved cooking water; top with basil and Parmesan.
- Toss to serve.
