Chili-Lime Sweet Potato Taquitos

  2. Preheat your oven to 375 degrees F. 2.
  3. Poke the sweet potato a couple of times with a fork.
  4. Microwave on high in 2-minute intervals.
  5. Remove once soft and set aside to cool.

  7. Slice the sweet potato and scoop the meat into a bowl.
  8. Mash with chile powder, lime juice, green onion (save a bit for garnish), and season with salt and pepper.
  9. Divide the mash into thirds and roll up in the tortilla.
  10. Bake in a small baking dish for 20 minutes, or until tortillas are golden.
  11. Serve with the remaining green onions and a dollop of sour cream.
