Morro Bay Salad Recipe
- 1 lg. cucumber
- 1 pound sm. cooked shrimp
- 1 lobster tail, cooked, chilled
- 1 pkg. Good Season's Italian dressing
- 4 hard boiled Large eggs, refrigerated
- 1 pound cooked clean crab meat
- 1 head iceberg lettuce
- 1 med. white Spanish onion
- NOTE: Use fresh or possibly fresh-frzn fish.
- Prepare Italian dressing as directed on the package.
- Set aside or possibly chill.
- Rinse shrimp and crab in cool water.
- Combine together.
- Remove lobster meat from shell and flake.
- Add in lobster to other fish.
- Shred 1/2 of lettuce head.
- Toss with fish.
- Slice cucumber.
- Dice onion.
- Toss with other ingredients.
- Add in salad dressing and mix well.
- Arrange lettuce leaves on plates and serve salad over lettuce.
- Garnish with Large eggs, quartered.
- Makes 4 large salads.
