Grilled Olive Toasts

  1. Prepare grill or heat a ridged grill pan over moderately high heat until hot but not smoking.
  2. Grill bread in batches on a rack set 5 to 6 inches over glowing coals or in hot grill pan until golden with dark grill marks, about 1 minute on each side.
  3. Lightly rub 1 side of each toast with garlic.
  4. Brush same side of each toast with oil and season with salt.
  5. Cut toasts into serving pieces if desired.
