Apricot Filling For Fried Pies Recipe
- 1 1/2 c. dry apricots, cut up
- 1 1/2 c. water
- 3/4 c. sugar
- Bring apricots and water to a boil.
- Reduce heat and simmer for approximately 30 min.
- Be careful not to let mix scorch.
- Allow water to cook down.
- Add in sugar to apricots.
- Let apricot filling cold completely before filling pastry circle.
- Place several Tbsp.
- of cooled apricots in each pastry circle and mix in half.
- Seal edges with flour dipped fork.
- Heat 6 Tbsp.
- of oil in 10-inch heavy skillet.
- Fry till brown on each side (adding oil if necessary).
- Drain on paper towels.
- Allow to cold.
- Makes 10 pies.
