Healthy Sweet Potato Wrap
- 1 pound Sweet Potatoes, Peeled And Cut Into 1 Inch Chunks
- 2 Tablespoons Sesame Oil
- 1/2 teaspoons Chili Powder
- 1/4 teaspoons Salt
- 18 teaspoons Cayenne Pepper
- 1/4 cups Tahini
- 2 Tablespoons Extra Virgin Olive Oil
- 1- 1/2 Tablespoon Lemon Juice
- 2 Tablespoons Honey
- 1- 1/2 Tablespoon Water, More Or Less Until Desired Consistency Is Reached
- 2 cloves Garlic, Finely Minced Or Pressed
- 1/2 teaspoons Salt
- 1 whole Burrito Sized Whole Wheat Wrap
- 1/4 cups Baby Spinach
- 1/4 cups Cooked Brown Rice
- 1/4 cups Rinsed And Drained Black Beans
- 4 pieces Roasted Sweet Potato
- 3 Tablespoons Crumbled Feta
- 2 Tablespoons Tahini Sauce
- 2 Tablespoons Chopped Cilantro
- For the sweet potatoes: Preheat oven to 375 degrees F. On a rimmed baking sheet, toss sweet potato chunks with oil, chili powder, salt, and cayenne pepper.
- Bake for 15 minutes, stirring halfway through.
- Raise heat to 400 degrees F and bake for an additional 5 minutes, or until golden brown.
- Let cool slightly.
- (You will only need 4 pieces of sweet potato for each wrap.)
- For the tahini sauce: Whisk together all sauce ingredients until well combined.
- (You will only need 2 tablespoons sauce for each wrap.
- Store remaining sauce in the refrigerator.)
- To assemble the wrap: Top whole wheat wrap with baby spinach.
- Sprinkle on cooked brown rice.
- Add black beans.
- Top with sweet potato chunks and sprinkle crumbled feta.
- Drizzle with tahini sauce and top with chopped cilantro.
- Wrap up and enjoy!
