Not Your Same Ole Bruschetta
- 2 cups Cherry Tomatoes, Quartered
- 2 Tablespoons Olive Oil
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 2 cloves Garlic, Minced
- 4 leaves Fresh Basil, Minced
- 1/4 cups Goat Cheese Crumbled
- 1/2 loaves French Baguette, Sliced 1/4 Inch Think
- Turn oven broiler on (500 degrees F).
- Quarter tomatoes and add to a mixing bowl.
- Mix olive oil, salt, pepper, garlic and basil in another small bowl.
- Pour olive oil mixture over the tomatoes.
- Stir in goat cheese with a wooden spoon.
- Put the bowl in the fridge to chill.
- Slice baguette into 1/4 inch rounds (roughly 10 slices).
- Place on a baking sheet and broil in the oven until browned.
- Top with chilled bruschetta mixture.
