Not Your Same Ole Bruschetta

  1. Turn oven broiler on (500 degrees F).
  2. Quarter tomatoes and add to a mixing bowl.
  3. Mix olive oil, salt, pepper, garlic and basil in another small bowl.
  4. Pour olive oil mixture over the tomatoes.
  5. Stir in goat cheese with a wooden spoon.
  6. Put the bowl in the fridge to chill.
  7. Slice baguette into 1/4 inch rounds (roughly 10 slices).
  8. Place on a baking sheet and broil in the oven until browned.
  9. Top with chilled bruschetta mixture.
