Rajas Con Cerveza (Pepper Strips With Beer and Cheese)

  1. Heat oil in a non-reactive skillet over medium heat.
  2. Add onions.
  3. Cook until onions are translucent.
  4. Add pepper strips, cover, and cook just until peppers are tender, about 4 minutes.
  5. Add beer and bring to a boil.
  6. Cook until liquid has evaporated, about 7 minutes.
  7. Stir in cheese and stir just until melted.
  8. Serve with tortillas.
