Weight Watchers Spinach-Caramelized Onion Salad (1 Point)
- 4 teaspoons light stick butter
- 1 lb sweet onion, thinly sliced
- 12 teaspoon salt
- 12 teaspoon black pepper
- 1 cup reduced-sodium chicken broth
- 1 cup grape tomatoes
- 2 tablespoons red wine vinegar
- 12 head chicory lettuce, torn into 1-inch pieces
- 6 ounces Baby Spinach
- Melt the butter in a large nonstick skillet over medium-high heat.
- Add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes.
- Cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer.
- Remove the skillet from heat; stir in the broth, tomatoes, and vinegar.
- To make the salad, place the chicory in a large bowl.
- Add the onion mixture and toss to coat.
- Add the spinach; toss and serve at once.
