Weight Watchers Spinach-Caramelized Onion Salad (1 Point)

  1. Melt the butter in a large nonstick skillet over medium-high heat.
  2. Add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes.
  3. Cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer.
  4. Remove the skillet from heat; stir in the broth, tomatoes, and vinegar.
  5. To make the salad, place the chicory in a large bowl.
  6. Add the onion mixture and toss to coat.
  7. Add the spinach; toss and serve at once.
