Slow Cooker Beef Stew
- 1 lb beef, stew meat
- 2 potatoes, peeled and cubed
- 2 cups beef broth
- 1 12 cups vegetable juice, V8 is best
- 2 stalks celery, diced
- 2 carrots, diced
- 1 sweet onion, diced
- 3 bay leaves
- 12 teaspoon salt
- 12 teaspoon dried thyme
- 12 teaspoon chili powder
- 14 teaspoon pepper
- 2 tablespoons cornstarch
- 1 tablespoon cold water
- 1 cup frozen peas
- Combine first 12 ingredients in a slow cooker.
- Cover and cook on low until meat is tender, about 7 hours.
- Add frozen peas.
- Combine cornstarch and water until smooth.
- Stir into stew.
- Cover and cook on high until thickened, about 30 minutes.
- Discard bay leaves and serve.
