Blueberry Meringues Recipe
- 1 x Egg white
- 2 ounce Caster sugar
- 1 x Millilit double cream,
- 4 ounce Blueberries
- 1 Tbsp. Icing sugar
- Pre-heat oven to Gas Mark 2/300F/150C Beat egg white till stiff peaks form
- Add sugar a tbsp at a time, mixing in well each time, forming a glossy meringue mix.
- Place 4 heaped tbsp of the meringue mix on a parchment-lined baking tray, spacing them well apart.
- Flatten the meringue mix with a spoon.
- Place the meringues in the oven, reducing heat to Gas Mark 1/275F/140C Bake for 1/2 hour.
- Turn off oven.
- Leave meringues in the oven to cold and set for 4 hrs or possibly
- overnight.
- Whip double cream.
- Spoon cream onto meringue nests.
- Top with blueberries/ Sift over icing sugar.
- Serve.
- NOTES : Advance planning is needed for this dish as the meringues need at least 4 hrs to dry out.
- The final dish itself, however, is quickly assembled.
