Blueberry Meringues Recipe

  1. Pre-heat oven to Gas Mark 2/300F/150C Beat egg white till stiff peaks form
  2. Add sugar a tbsp at a time, mixing in well each time, forming a glossy meringue mix.
  3. Place 4 heaped tbsp of the meringue mix on a parchment-lined baking tray, spacing them well apart.
  4. Flatten the meringue mix with a spoon.
  5. Place the meringues in the oven, reducing heat to Gas Mark 1/275F/140C Bake for 1/2 hour.
  6. Turn off oven.
  7. Leave meringues in the oven to cold and set for 4 hrs or possibly
  8. overnight.
  9. Whip double cream.
  10. Spoon cream onto meringue nests.
  11. Top with blueberries/ Sift over icing sugar.
  12. Serve.
  13. NOTES : Advance planning is needed for this dish as the meringues need at least 4 hrs to dry out.
  14. The final dish itself, however, is quickly assembled.
