Peanut Brittle and Holiday Peach Sauce over Ice Cream
- 1 (16 ounce) package unsweetened frozen peach slices, partially thawed
- 14-13 cup dark rum or 14-13 cup peach nectar
- 2 tablespoons light corn syrup (optional) or 2 tablespoons dark-colored corn syrup (optional)
- 12 teaspoon almond extract
- 1 quart vanilla ice cream
- 4 ounces peanut brittle, crushed (about 1 cup)

- FOR SAUCE:.
- In a food processor or blender, combine peach slices, rum or peach nectar, corn syrup (if using) and almond extract.
- Cover and process or blend until almost smooth.
- FOR SERVING:.
- Scoop ice cream into 8 chilled dessert dishes or parfait glasses.
- Pour peach sauce over ice cream.
- Top with crushed peanut brittle.
- If you like, serve with additional whole pieces of peanut brittle on the side.
