Sophie's Garlic Cheating Chicken Curry
- 450 grams chicken
- 2 sachets chicken cup-a-soup or similar
- 1 tbsp garlic powder
- 500 grams Low fat natural yoghurt
- 200 grams green beans
- 2 tbsp curry powder
- 2 tbsp tomato puree
- 1 Enough rice for 4 people.
- Preheat your oven to 180C.
- Take your soup powder and garlic powder and mix with about 50ml boiling water.
- Make a pouch from foil and place the chicken inside.
- Pour your soup mixture on the chicken, and seal the foil up so that it will not leak.
- Bake for approximately 30 minutes.
- About 10 minutes before your chicken is done baking, put your rice on to boil.
- In another saucepan, gently heat your yogurt.
- Add the rest of your ingredients.
- When time is up, remove your chicken from the oven.
- Carefully open the foil packet (careful of steam!)
- and pour any liquid into your yogurt.
- Chop the chicken into bitesize chunks and continue to simmer until your rice is done.
- Serve and enjoy!
