Lemon-Herb Salmon
- 2 12 cups fresh breadcrumbs
- 4 garlic cloves, minced
- 12 cup chopped fresh parsley
- 6 tablespoons grated parmesan cheese
- 14 cup chopped fresh thyme
- 2 teaspoons grated lemon peel
- 12 teaspoon salt
- 6 tablespoons butter, melted and divided
- 3 lbs salmon fillets
- In a shallow bowl, combine bread crumbs, garlic, parsley, Parmesan cheese, thyme, lemon peel and salt; mix well.
- Add 4 tablespoons butter and toss lightly to coat; set aside.
- Pat salmon dry.
- Place skin side down in a greased baking dish.
- Brush with remaining butter; cover with crumb mixture.
- Bake at 350F for 20 to 25 minutes or until salmon flakes easily with a fork.
