BBQ Chicken Quesadilla

  1. In a small bowl, combine chicken and barbecue sauce.
  2. Mix well.
  3. Set aside.
  4. In a large skillet, melt butter over medium heat.
  5. Place one tortilla in middle of pan.
  6. Top with 1/4 cup shredded cheese.
  7. Spread chicken in an even layer on top of cheese, leaving about a 1/2 inch border around the tortilla.
  8. Top with onion, followed by rest of cheese.
  9. Place second tortilla shell on top of chicken mixture and lightly press down.
  10. Heat tortilla on both sides, about 34 minutes, or until shell turns golden brown and cheese starts to melt.
  11. Remove from pan and cut into four slices.
  12. Serve immediately.
  13. Enjoy!
