Herbed Potatoes And Carrots Recipe
- 4 sm. potatoes, very thinly sliced
- 1 med. onion, very thinly sliced
- 4 carrots, very thinly sliced
- 2 tbsp. Italian dressing
- 1/4 teaspoon salt
- 1/4 teaspoon Italian seasoning
- 1/8 teaspoon pepper
- 2 ice cubes
- Lowfat sour cream (optional)
- Preheat grill for 10 min.
- Arrange potatoes, onions and carrots on 24 x 18 inch double thickness of heavy-duty aluminum foil.
- Sprinkle with Italian dressing, salt, Italian seasoning and pepper.
- Add in ice cubes.
- Cook at medium heat with hood closed, till vegetables are tender, 20 to 25 min, turning packet over once.
- Serve with lowfat sour cream.
- Serves 4 to 6.
