Hot Dog Soup
- 8 hot dogs, each cut in 6 pieces
- 2 lbs potatoes, peeled and cut in 2-inch pieces
- 1 tablespoon butter
- 1 garlic clove (to taste)
- 3 cups plain tomato puree
- 3 cups water
- 1 teaspoon salt
- black pepper
- 1 teaspoon italian seasoning
- 12 teaspoon sugar
- 8 ounces green beans, cut into thirds
- 2 green zucchini, halved and cut into triangles
- 1 red bell pepper, trimmed and membrane removed, cut into 2-inch strips, then into triangles
- Melt butter in a Dutch oven and add hot dogs, sauteing them over medium heat to give color and bring out the flavor.
- Add the garlic, then the tomato puree.
- To this mixture add: water, salt, pepper, Italian seasoning and sugar.
- Bring to a boil.
- Add the potatoes and simmer 5 minutes.
- Add the green beans, zucchini and red bell pepper.
- The About.com host demonstrated cutting the latter 2 vegetables into triangles.
- He laid the strip of vegetable at a slant and made a cut; this is the first side of the triangle.
- He then moved the strip in the other direction so that the next cut would complete the triangle.
- The angles will be approximately 45 degrees.
- After adding these vegetables, cover the pot and simmer 15-20 minutes or until vegetables are tender.
- Kids like their vegetables nice and soft.
