Pea Soup
- 2 cups dried peas
- 12 lb pork spareribs, cut in pieces with bone
- 1 onion, chopped
- 1 teaspoon salt
- Soak peas 2 to 3 hours overnight.
- Retaining soaking water, add pork and onion.
- Bring to a boil, cover.
- Reduce heat to a simmer and cook about 4 hours.
- Add salt to taste.
- Remove pork bones and serve hot.
