Pampoen Pofers

  1. Ensure that the cooked pumpkin is well drained.
  2. Beat eggs, add to pumpkin and mix.
  3. Sift the self-raising flour, salt and baking powder together and mix with pumpkin to form a soft dough.
  4. Heat oil in a saucepan(or bigger) over medium heat.
  5. Scoop batter into frying oil using a dessertspoon and fry until golden brown and cooked through.
  6. Drain on kitchen paper.Keep warm in serving dish.
  7. Syrup 1.
  8. Add a little of the cold water to the custard powder and mix to form a smooth paste 2.
  9. Heat the rest of the water in a saucepan and dissolve the sugar in it.
  10. 3.
  11. Add butter and cinnamon and bring to the boil.
  12. 4.
  13. Stir in the custard powder paste and boil for a minute.
